Government Estate coffee is recognised as being of higher quality. In processing, the ripe cherries are taken straight to the mills after being harvested and undergo a wet processing method which results in a heavy-bodied, good and sweet coffee.

Coffee trees were introduced to Indonesia by the Dutch in the mid-seventeenth century although it is rumoured that Java coffee was sold in Amsterdam as early as 1712. Today Indonesia produces nearly 7 million bags of coffee a year and top-grade Arabicas are still produced on Java as well as on Sumatra, Sulawesi, and Flores.

Flavour Profiles Chocolate, Smokey, Sweet
Roast Profile We roast this to medium/dark to ensure the velvety dark cocoa smokiness, sweetness and slight fruity acidity, however this bean can be roasted dark to deliver less sweetness, more smokiness and punch for those who like their coffee this way. Java is a tough bean from high altitude and can withstand high roast temperatures, it is roasted in our vintage STA drum roaster as the slight inconsistencies associated with drum based conduction roasting adds to the character of the bean.
Cupping Notes 1. Acidity - Slight but pleasantly detectable unlike the Java. 2. Sweetness - good sweetness, similar to dark chocolate 3. Body - plenty of body quite a 'thick' coffee that smothers the tongue. 4. Balance - If you like lower acidic coffees this is for you, different brewing methods amplifies certain characteristics. 5. Character - a smooth, sweet velvety luxurious coffee with a lingering after-taste of dark cocoa and liquorice. In a good espresso machine look out for hints of plummy fruit. This is a superb after dinner coffee and is lovely in the cafetiere/aeropress, twin with a chocolate pudding and a strong brandy or peaty whisky. With milk it becomes creamy smooth and retains is flavour well.
Origin Notes All main estates are located in East Java in the vicinity of the Ijen volcanic complex. The arabica coffee plant was brought to Indonesia around 1696 and has been commercially cultivated until today. The range of altitudes suitable for coffee production is 3,000 to 6,000 feet with most growing in the plateau region at 4,500. Surrounded by volcanoes and lush forests, the Blawan & Jampit coffee estates are perfect growing areas for fine, high altitude Arabica coffee. In total, there are around 3,000 hectares of land that are used for the cultivation of coffee. The Estates themselves are government owned, and their history dates as far back as the Dutch colonial periods, when these two, along with four others, were set up to grow and cultivate coffees. Local families have thus worked on the land for generations, and their care of the plantations is exceptional. Knowledge has been carefully passed down, leading to very well tended, mulched soils and pruned coffee trees. Harvesting takes place during the period June - September. During this season the workforce swells to around 3,000 people - the majority being extra staff employed from the surrounding nine villages. Because of the high quality and premium price these farmers receive, all are paid in excess of the national minimum wage. Unlike other coffees from this region - particularly those from private estates - our Java is fully washed and pulped at the two Estate's central milling area. The facilities are of a very high standard, with a cupping and roasting room devoted to improving the local farmers' knowledge of what coffee should taste like, so that crop improvements can be made year on year, and favourable comparisons made against neighbouring estates. Through this transfer of skills, the farmers also learn more about the coffee industry, and how their lives are crucial to safeguarding quality.
