The coffee is grown on the Nossa Senhora de Fatima farm, a 230 hectare Organic Coffee producer at Minas Gerais in the region of Cerrado. The yellow bourbon coffee cherries are picked, pulped then immediately air dried on raised beds, producing a bright, clean coffee with added complexity over natural-processed coffees.


Brazil is the world's largest coffee producer and also the most complex, delivering mass-produced coffees that rank among the world's cheapest to elegant coffees, prized as the world's finest origins for espresso brewing. Brazil's internal consumption of coffee is also increasing and is expected to overtake that of the USA (The current largest world consumer) in the next few years.

Details

Flavour Profiles Chocolate, Plum & Berries, Sweet
Roast Profile We roast this to just beyond medium but not medium dark, wanting to preserve that superb sweetness and plum/berry flavour whilst developing the cocoa after taste. It can go a little darker where more cocoa and body is experienced but to the detriment of a reduced sweetness and fruitiness. Whilst the bean behaves well in the roast it does need careful handling with no large 'shocks' that can impact the delicate flavours.
Cupping Notes 1. Acidity - Well balanced, mild & pleasing. 2. Sweetness - very well developed sweetness 3. Body - Medium body, smooth. 4. Balance - At this roast it's just right, sweet & fruity with lingering cocoa. 5. Character - a bright sweet melt in the mouth coffee, delicious plum & berry with a divine cocoa after taste, no bitterness.

Have tried every organic coffee out there and this is simply the most utterly delicious coffee I have tasted. My local supplier stopped selling it so I have had to seek it out here. Not easy to get hold of.

Great espresso, smooth with a nice aftertaste where you really can taste the cocoa.

Also really good in a cappuccino as you can still easily pick out the flavours despite the milk.
